Banana pudding
Makes 4 servings
Bananas are a great energy source as well as high in fibre and potassium. This snack also includes milk and very little fat, so it's good for the whole family. The key to this recipe is using ripe bananas. The skin should be yellow with little brown specks.
Ingredients
- 2 cups (500 mL) skim milk
- 1 package (about 3 oz/92 g) instant vanilla pudding
- 2 medium bananas, thinly sliced
- 7 graham crackers
- 2 tsp (10 mL) brown sugar
Directions
- In a mixing bowl, combine pudding and milk. Set aside.
- In a 8-inch (1.5-litre) square glass dessert dish, crumble graham crackers to line the bottom. (Alternatively, you can use small dessert bowls.)
- Pour pudding mixture over crackers.
- Arrange banana slices over top. Sprinkle with brown sugar.
- For a special treat, pre-heat oven on broil, then place dish under the broiler for approximately one minute to melt sugar.
- Serve warm or cold.
