Sunshine French toast

Sunshine French toastMakes 4 servings

Make breakfast extra special by whipping up this easy French toast recipe that includes all four food groups. Your kids will love it!

If you are not a regular consumer of soy beverage, buy it in a 1 cup (250 mL) single-serve size. Then you will have some on hand for when you need it.

Ingredients

  • 1 egg
  • 1 egg white
  • ¼ cup (50 mL) vanilla soy beverage
  • ½ tsp (2 mL) vanilla extract
  • Dash cinnamon
  • 2 thin whole grain hamburger buns*
  • 2 cups (500 mL) sliced strawberries and bananas
  • Cooking spray

Directions

  1. In a flat bowl or casserole dish, combine eggs, soy beverage, vanilla and cinnamon.
  2. Spray skillet lightly with cooking spray and heat pan over medium heat.
  3. Dip each piece of bun into the egg mixture and let it absorb some of the egg. Place it in the pan. Repeat for remaining 3 pieces.
  4. Cook on each side for 3 to 4 minutes.
  5. Serve with sliced fruit to look like a sun.

*You can make this with regular whole-wheat bread if you cannot find thin hamburger buns. Cut the bread in the shape of a circle. Bread is more absorbent, so you will likely only use three slices, which makes for only 3 servings.
